Bali is a tiny volcanic island with many small coffee farms. Coffee production is typically organized around a Subak Abian, which refers to the ecologically sustainable irrigation systems developed more than 1,000 years ago by Hindu priests who practice Tri Hita Karana (the three sources of prosperity), a philosophy focused on the harmonization between the environment, humans and God. They use no pesticides, and do use organic fertilizer. Bali Kintamani is probably the first special-prep Indonesian coffee, and they've been doing it a LONG time.
This is an Indonesia coffee, yes, so of course it has the rustic molasses, chocolate, herbal, foresty notes, but....the terroir and natural process add many layers of complexity! Notes of plum cordial and cherry brandy support the deepest of chocolate notes, tropical canned lychee and mango make an appearance, with spicy cinnamon chai and oak (as in oaks effect on whisky!) notes rounding it out, and it's all very mellow, thick and buttery, and balanced with a heavy nod toward the deep, dark end of the flavor spectrum. This will make a fat, gloriously substantial cup any way you brew it.
