Finca Capetinga is run by Eduardo Junqueira, a 5th generation coffee farmer with a serious bent toward ecologically sound growing practices. Regenerative agriculture is the theme, with ecological corridors connecting conservation areas across the farm, the use of organic fertilizers, C02 neutralization, and renewable energy, as well as Rainforest Alliance Certification.
The 72hr anaerobic fermentation makes this coffee fruitier than a lot of Brazilian coffee, which, despite alternative processing, can still seem like mundane riffs of the 'chocolate and hazelnut' theme. We still have those chocolate covered hazelnut notes, but layered on top we have a lot of honeyed sweetness, ripe juicy tropical papaya, kumquat, and floral notes. Great for drip or as a single origin espresso!
