We've carried coffees from the Rancho Grande farm many times before, and this is another special prep from them. Rancho Grande has been operated by the Reis family since 1933, and they produce dairy, meat, as well as coffee, while experimenting with new processing methods, maintaining sustainability, and caring for their live-in workers. This coffee is anaerobically fermented for 48hrs before being naturally dried, using specially constructed 15k liter boxes which allow air to flow from the bottom up at precisely 35 degrees Celsius.
The process lends itself to a more fruity, refreshing profile than the standard Brazilian fare: caramel sweetness, stewed cherries, hibiscus tea, and mulling spice are evident, with summery floral notes on top. Try it as iced coffee, pourover, or a juicy espresso!
